Iron Chef Mama Pt II (Baking Edition)

Does anyone else have the complete inability to bake simple things like Banana Bread and Chocolate Chip Cookies or is it just me? It seems like no matter how simple or straight forward the recipe, something just doesn’t turn out right. My cookies are too flat, too burnt, too cakey. If I could wave a magic wand and pump out perfect baked goods, I would do it in a heartbeat. Instead, I rely on Betty Crocker and her premade mix. It’s literally magic in a bag. 

Thankfully, I found that magic in a simple banana bread recipe that I stumbled upon a few years ago, in the most unlikely of places. It’s from a food blog called Mr. Breakfast. He implies in his recipe that it’s, “So Easy…It’s Bananas!” I’m now a solid believer that the more complicated the banana bread recipe, the worse it’s going to be. Because Mr. Breakfast is right, it is just bananas. Don’t overcomplicate it. Below is that recipe for you to try out. 

 

Cream together…

8 tablespoons butter
1 cup sugar 

Stir in…

2 beaten eggs
3 mashed bananas 

Slowly mix in…

1/2 tablespoon salt
1 teaspoon baking soda
1 and 1/4 cups all purpose flour 

Fold in… 

1/3 cup walnuts (optional) 

Pour in greased loaf pan. Bake at 350 for 40 to 50 minutes. 

Makes one 9 1/2 x 5 loaf or three 6 x 3 1/2 mini muffins.
